Here it is – my first ever Desert Island Dish linkup! I wanted to create a link up where each month you choose which recipe, based on a theme, you would take to a desert island with you. Read more about it here.
This month’s theme: fruit.
I figured that if you are stuck on a desert island, you will have lots of fruit to hand, but eating bananas and coconuts everyday will get dull! So if you could access any fruit on your island to make one delicious dish, what would it be? It could be sweet or savoury, hot or cold, healthy or indulgent.
I’ve gone with this lemon and raisin flapjack. Infusing the raisins in tea and lemon juice makes them lovely and tasty plus the lemon zest and juice mixed with the oats really lift the recipe. I am loving flapjacks at the moment, a small one is a great pick me up for my lunch box. See the full recipe here.
