Meal Planning Monday – w/c 13 January

I don’t know why I haven’t joined in with Meal Planning Monday sooner. I always make a list of meals for the week- planning in advance saves me money (have chicken for Sunday lunch? I plan it for lunch and tea on Monday too), time pondering in the shops and, of course, there is less waste.

I admit I normally do my planning on Sunday but I won’t let that stand in the way of me and a good post!

When I plan, I usually plan for a set number of days – I don’t normally decide which meal we’re having until the night before.

Thursday is often Curry Thursday in our house. That’s when I let my husband take over the kitchen and make us a meal from Rick Stein’s India book. This started in the autumn, had a break for Christmas and is back this week- woo hoo!

So here’s what I am planning for the next seven days.

Slow cooked rabbit– this is actually the first meal of the week (Sunday) because I bought it on Saturday at Wigan market so it needs using. Am trying to recreate a great little rabbit dish we had it Crete- it was cooked slowly in the wood burning oven in white wine with thyme and garlic. No wood burning oven but I have browned it before putting it in the slow cooker. Am serving with whole roast carrots (the last from the garden) and potatoes.  If it is any good I will share the recipe!

Nigella’s Mexican Lasagne – this will be early in the week as I have some mature chedder which needs using. I don’t do it exactly like Nigella; see my version here. Mince and wraps are already in the freezer, so I will use up the last of the veg in the fridge and supplement with some fresher stuff. Simple and delicious.

Fishcakes-another freezer meal. They are actually prawn with thai spices in panko breadcrumbs. Hubby will have two, I’ll have one with some veggies.

Ham carbonara orzo– I have a shank in, so will drop it in the slow cooker one morning and make it in to a simple pasta dish in the evening. I suspect I will do this Wednesday when my mum-in-law comes for tea.

Chilli and rosemary cheesy polenta fingers – recipe from River Cottage Veg book. My first time making them.

Chicken and rosewater biryani – Curry Thursday will be on Saturday this week as I am working Thursday night. Andrew is making this, with me supervising!

There are only six meals planned for the next seven days as Thursday night I am working so hubby will raid the freezer for leftovers from a previous week.
