I'm not a fan of white chocolate but I'm less of a fan of waste. I'd been wondering what to do with the white hot chocolate from the multipacks, but I was determined to give them a go. So when I spotted these cardamom drops in the cupboard I knew I'd found an answer.

What a result! 

The chocolate was actually not sickly sweet. There's loads of vanilla in there. And I always think of cardamom as a warming sweet spice. They're the perfect mix - so glad I tried it!

This week's loaf is a dark crusted little number. This week's loaf is a dark crusted little number. Made using @shiptonmill organic fig, sunflower seed and spelt flour mix. 

I went in gung-ho with the water, using my usual amount and it was too much. So I added a few tablespoons of Shipton plain strong white while it was mixing and the result was a super soft and very tasty loaf! 

I've been enjoying with halloumi for lunches and it's also made for marmalade at breakfast. I've just remembered I've got some fig jam in the cupboard - that's another brekkie sorted! 

I only had a 1kg bag of this flour  in my Shipton order, but when I do my next one (in about 5 months as I got a 25kg sack of strong bread flour) I'll be sure to add a few more. There is ebough for one more loaf though πŸ‘

Don't think I've baked with spelt before so was interesting to see how the mix handled water differently than my usual white/rye mix.

Not going to lie, this year's Christmas cake is im Not going to lie, this year's Christmas cake is immense. Made four in total, including a big one for the two of us, and all  were generously fed with amaretto for weeks. 

Half way through ours and wishing I'd made more. Maybe I'd do another for Easter! 

Also after years of fannying about with slices, I've finally gone for the wedding cake method of cutting it - so much better!

Ok, I know I said it was the year of the loaf tin, but I do love little soft rolls for sandwiches so I made a few rolls today too. 

White / rye / wholemeal and mixed grains. When they come out, I immediately cover in a towel to cool so they stay soft. 

Tucked away in the freezer for the coming days.

πŸ₯– 100g each rye and wholemeal flours @dovesfarm 
πŸ₯– 1 cup of mixed grains 
πŸ₯– 7g yeast 
πŸ₯– 10g fine sea salt

🍞 First bread of the year 🍞 Starting the ye 🍞 First bread of the year 🍞

Starting the year by making bread for the next week. 

First up was this fig and walnut loaf. After a year of making rolls, knots and pretzels I've gone back to the bread tin more and more since early December - because winter means toast! 

It might not be cool or 'artisan' (why is every loaf made in a casserole now called artisan?), but it fits in the toaster and the toastie maker so I'm happy Β―\_(ツ)_/Β―. 

2021 is the year of the loaf tin - you heard it here first! 

I've quite a bit of jam / marmalade in the fridge so I thought a soft rye mix, with sweet figs and walnuts would be perfect for them. 

🍞 100g wholemeal rye flour (@dovesfarm) 
🍞 400g white bread flour (@shiptonmill) 
🍞 7g dry yeast
🍞 10g fine sea salt 
🍞 320-330g tepid water
🍞 handful each dried figs and walnuts
🍞 2lb loaf tin

Christmas reading sorted courtesy of the @elizabet Christmas reading sorted courtesy of the @elizabeth_gaskells_house book sale. Not like there's anything else to do so I'll be at home eating snacks and reading. 

Plus that top one on the pile. Anyone who's knew me circa 1996 will understand why I picked that one πŸ€“. 

If you love reading and love bargains, I can't recommend this monthly sale enough. This time they had three rooms crammed with everything you could wish for. 

There are a couple of books on my Christmas list as well so hopefully that means I'll be good to go until the next book sale!
